Real Sugar Free Apple Pie, don't mind if I do...

From 1st grade until I graduated high school my family didn't eat sugar. We snuck it, no surprise there, but on the whole we were a sugar free, clean eating family. Yeah, we were cool before it was cool. ;) My mom still doesn't eat much sugar and tries to eat healthily. When I was on my own for the first time, I rebelled. I maniacally bought Jif peanut butter, Welches grape jelly, and thick white sandwich bread. I made a sandwich. A few months later I had to buy new jeans. Haha, yes the freshman 15 attached itself to my hips and held on for dear life.Since that time I have come to appreciate my mothers wisdom. My family and I eat pretty healthy with little processed food. But living with moderation in all things we do enjoy sweetness in our life and we make it count. But, sometimes I like to have the delicious taste without the sugar. So I make my mom's no sugar apple pie with no artificial sweeteners. Every pie auction growing up it was quickly snatched. And that is what I made the other day. I made it and did some blind taste testing within my family. Could they tell it had no sugar? Nope. One friend said she doesn't typically enjoy apple pie. Much to her surprise and my delight she loved it! The crust is perfectly homemade, buttery and flaky, the filling I bake to perfection, and I hand shape the crust and edges every time. Nothing store bought about this delight. Or any of my pies. Take one bite and you will also join my pie revolution! So, do you want some now?






Arrow of Light Cake

I love the Boy Scouts of America. It helps that my husband is an Eagle Scout and is currently serving as a Boy Scout Leader. They do so much good and help to mold responsible hard working young men! I was happy to make a cake for one such young man. He earned his Arrow of Light and his mom wanted a cake to celebrate! She asked for the arrow of light symbol. I think the colors and symbol came out great!


Disney Frozen Cake!!! Finally!!

I was so excited when my cute little Frozen loving neighbor wanted a frozen cake! I have been wanting to do one for so long! This little blonde haired cutie was so surprised by her parents doing her party earlier than expected. I love how it turned out and love that the snowflakes are all different just like real ones! :) I think the colors came out perfectly!

Lion King Baby Shower

I think this is at the top of my favorite cakes list. My friend hosted a baby shower for a friend and I had the privilege of making this cake. I loved the theme and I loved how the design turned out so clean and not gimmicky. I love doing the super smooth buttercream. The effect is well worth the extra time! Vanilla on vanilla. I've said it before and I'll say it over and over but this combo is such a delicious classic! I have had many many take an extra spoon of frosting with exclamations of its delicious fluffy perfection! And the cake, well lets just say what gets leveled off doesn't get thrown out without a few "little tastes," it is moist and luscious!

My sweet friend's husband ordered her some birthday cupcakes. Red Velvet Cupcakes, Cream Cheese Frosting, and White Chocolate Garnish...are you kidding me?! Sooo yummy and they turned out so pretty!! Happy Birthday Ashlee!!

Cupcake Decorating Class Party

I tried something new last month! I did a cupcake decorating birthday party! It was so fun! I will continue to offer these parties with prices dependent upon number of participating guests! He are some pictures from the party. How fun are they!?

Sofia The First Cake

Happy Birthday to My Beautiful 4 Year old Daughter! 


 She was gifted some friends for Sofia so we added them too. :)
I can't believe she is already 4!! She is such a delight, little smarty pants, puzzle maker, bike riding, stubborn, adventurous, hilarious, giggly joy of a girl! 

She wanted a Sofia Cake and with our limited time that week I made this lovely simple Sofia Cake! I love how it looked and how it tasted! Chocolate on Chocolate on the bottom and Vanilla with Vanilla on top.
As Always I used my homemade marshmallow fondant that all the kids devoured! No gross tasting store bought fondant from my bakery!

Minnie Mouse, Knights, and a Bike

Three orders this week. The first order out the door this week was a bike cake. The sweet Mara takes after her dad in her love of biking and she has a special place in her heart for Frozen. I tried to incorporate both with this fun summery cake. Fluffy moist Strawberry cake with coconut buttercream! Delicious combination!! 


Next up were cupcakes for a cute castle theme 4th birthday. I love the liners and little knight toothpicks his mom found! I added a few dragons to give the knights something to fight. I think they turned out super cute! Chocolate on chocolate, a classic melt in your mouth flavor combination. 


And last was a sweet Minnie Mouse birthday cake. I love how Happy Minnie turned out! Perfect for a Minnie loving 3 year old. The cake and cupcakes were vanilla with raspberry frosting with a few chocolate peanut butter cup cupcakes. Delish!!

Birthdays Galore

September has the most birthdays of any other month nationally. Think back 9 months. Yup dead of winter, it was cold and people tend to snuggle a bit more when the temperature drops. In perfect conjunction, last week was crazy busy! I made 3 birthday cakes, 1 cupcake cake, 7.5 dozen cupcakes, and 7 pies! And on top of that we had dance classes, soccer practice, two farmers markets, a soccer game, a college football game and a triple birthday party! It was wonderfully nuts!! Here are the pictures I haven't yet shared. 

 Mother-in-Law's Birthday Cake. She chose Cherry Chip with Vanilla Frosting. It was soo moist and the flavor was to die for!

 Red Velvet Birthday Cupcakes. The birthday girl had four with no frosting. She is not a frosting fan, but the rest of her family had a fluffy luscious cream cheese frosting. 

This cake was for my husband's birthday. He was a TMNT fan growing up and so it was only fitting that I make his favorite ninja come to life with a mix of fondant and gum paste. Donatello has been happily devoured. Chocolate Cake with Chocolate frosting. My husbands favorite since he was a little boy.

The recipients of this cupcake cake are cousins and both love Ninja Turtles. Mikey was a favorite and I love how he turned out. Cupcake cakes are such a fun idea and during a party there is no cutting needed! Yellow Cake with Vanilla Frosting.

Coming Up this week are orders that include a chocolate bike with a touch of frozen, Minnie Mouse, and Castle themed cupcakes.  For the Farmers Markets there will be peach pie, apple pie, blueberry pie, raspberry pie. Peanut butter cup cupcakes,  Strawberry cupcakes with Coconut buttercream, and Chocolate mint cupcakes. TASTY!!!

Fall and 10% off your October order!!

FALL!! A week from today is the official start of fall and 3 weeks from now is my birthday, but who's counting? I love all things that come with fall. Leaves changing color and crunching under your feet, sweaters, hot chocolate, a warm your soul homemade pie (see what I did there?), family gatherings, Halloween, Thanksgiving, etc. I am trying my best to hold off decorating but that may not last too long, my wreath is already up. This was my 6th birthday! 22 years later and I still get excited!Check out those bangs and that cake!! This picture has 5 of 11 children birthed by my mom! Ouch!! She definitely deserves 12 birthdays a year, don't you think?



Every year, as an adult, I have pie for my birthday. It is my absolute favorite dessert! In the above video you can see that my husband wrote "OLD" out of candles on the pies. haha.

This pillow cake was super fun to do! I love the Arabian night theme and I love how it turned out! Here is a quote from the recipient. "Thanks so much Charity! Everything was delish and I had so many compliments on how cute it was! I especially loved the raspberry frosting on the cupcakes...I will definitely be getting in touch with you again."

Last night I had a last minute call for a birthday cake. I just happened to have two chocolate layers in the oven. I had 3 hours to finish baking, cool, crumb coat, refrigerate, think of a design, make and dye frosting, make my family dinner, clean up, and decorate the cake. It was interesting to see what I could do with such short notice. It was a good experience! 
There are little things I would definitely change if I had more time but I love how well it turned out for the time I had!
